Stuffed meatbals

Today I made some stuffed meatballs with mashed carrots-potatoes. Meatbals stuffed with an easy cheese sauce. The things I needed were minced meat (pork, veal), bread-crumbs, egg yolks, carrots, potatoes, Maredsous cheese and milk. And off course herbs, pepper and salt to taste.

First things first… the sauce. I prepared this a day ahead, since it will be frozen and afterwards it will be a lot easier to create the meatballs around the frozen sauce. So, take the milk and let the Maredsous cheese melt away in the milk on a low heat. when all the cheese has melted away, the cheese sauce is ready. Pour it in an ice cube mold and put in the freezer.

Preheat the oven at 180°C. For the meatballs, mix all the ingredients (meat, egg yolks and bread-crumbs, herbs) together. Take the sauce out of the freezer and form nice meatballs around the frozen sauce cubes. Put in the oven for about 30 minutes or until they start to color.

For the mashed carrots-potatoes, clean the carrots and the potatoes and cut them in small cubes. Boil until ready and mash them up. Since I had some sauce left , I heated the rest in a bowl in the microwave.
