Potato tortilla

Easy lunch today. Basic things you need are potatoes, onions, red bell pepper, eggs and herbs to taste.

Start washing the bell pepper and cut into small dices. Clean the onion and cut into small dices. Same with the potatoes. Heat a pan and add a dash of olive oil. Braise the onions, peppers and potatoes over a low heat.

Break the eggs into a bowl and beat them with a whisk. Pour the egg mixture over the vegetables and let the tortilla cook gently. Season with salt, black pepper and parsley.
