Baked banana with blueberry sorbet

Mix the frozen blueberries, frozen banana and some maple syrup together to a smooth sorbet and place into the freezer.

Cut the peeled bananas lengthwise and place in a baking dish with the peel down. Sprinkle generously with a mixture of sugar and cinnamon and cover the dish. Put in a preheated oven (180°C) for about 20 minutes.

After 20 minutes, remove the lid and place the dish a few minutes under the grill to allow the sugar to caramelise.

Put two banana parts on a plate. Place two quenelles of the blueberry sorbet on the plate. Enjoy!
