Quinoa Salad

Start by boiling the quinoa according to the package directions. When cooked cool down under cold water immediately and drain well. Clean and cut the orange bell pepper into small cubes, drain the red beans and the corn.

Take a tablespoon of mayonnaise, a tablespoon of yogurt, a teaspoon of mustard, a drop of lemon juice and a teaspoon of dried dill and mix together for a nice dressing. If necessary, season with salt and pepper.

Mix the quinoa and the vegetables together with the dressing and let the flavors spread in the dish while cooling in the fridge. Enjoy!
