Oven dish with pork roast

Clean and cut the carrorts, potatoes, red and orange bell pepper, spring onion, mushrooms. Precook the potatoes and carrots slightly. Bake the mushrooms in butter.

Take an oven dish and make layers of the vegetables… Potatoes and carrots, then I placed some slices of pork roast (leftovers from yesterday), then mushrooms, bell peppers and spring onion. Cover with diced tomatoes.

Cover the dish and place in a preheated (200°C) oven for about 30 minutes. Then remove the lit. Use a spoon to make small holes in the dish and break the eggs in this hole, leaving the egg yolk in whole. Sprinkle over the rest of the dish some grated cheese. Bake for another 20 minutes untill the eggs have set. Enjoy!
