Salmon with peas mint puree

First of all cut the fresh mint very fine. Wash a lemon, cut the zest fine and squeeze. Season the salmon with salt and pepper. So far the preparations.

Steam the salmon until ready. Make mashed potatoes. Boil the peas, when ready drain, and chop finely together with some salt, pepper, olive oil and the fresh mint. Bring the heavy cream together with the fine lemon zest and some lemon juice to a boil and let simmer until it begins to thicken.

Use a cooking ring to arrange the peas mint puree on the plate. Carefully place the salmon on top and drizzle some sauce over it. Finish with some finely cut fresh mint.
