Casillero del Diablo Reserva Privada

This is one of my favorite wines. Casillero del Diablo Reserva Privada Cabernet Sauvignon 2017 from Chile.

This Reserva Privada is a Cabernet Sauvignon made with carefully chosen grapes that are harvested in selected vineyards located in the renowned Maipo Valley at the foot of the Andes Mountains. Stony soils with very good drainage combined with a Mediterranean climate influenced by the mountains give rise to a superior quality wine with tremendous structure and elegance. This 2017 vintage was aged in oak barrels for 12 months.

Winemaker’s Tasting Notes

Color: Deep, bright, intense ruby-red.

Aroma: Delicate aromas of red cherries and plums intermingle with an elegant touch of blackcurrant. Aging in oak barrels lends remarkable complexity on the nose with notes of vanilla and cedar.

Palate: This wine has firm structure with smooth and enveloping tannins at the same time. The fruit is perfectly balanced with the contributions of the oak and ends with a pleasingly long and lingering finish.

Pairing: This Cabernet Sauvignon is ideal with various cuts of red meats. Also recommended with aged cheeses.
