For lunch today, we had a spinach salad. Very qucik and easy to prepare. First of all, bake the bacon nice and crispy. Wash the spinach. I bought a radish mix with red onion, radish, celery, cabbage, … and a box of melon in dices. Combine balsamic (or another vinegar) and olive oil to a dressing.

Take a bowl, put some spinach leaves in it and sprankle with the dressing. Place the radish mix, melon cubes and bacon on top. Spray some dressing over it. Finish with cut macadamia nuts. Enjoy!
