first start by watching the carrots. Place then on an oven plate, drizzle with olive oil and thyme and let bake until done. Peel the potatoes and cut into cylinders. Arrange them in a pan, put them completely under water and add a large amount of butter. Start boiling the potatoes. When they are cooked, they immediatly start baking with the butter you added. I took the leftovers of the potatoes and the carrots and mixed them: to a carrot stoemp.
Brown the pork tenderloin on all sides and place inan oven dish and let it bake in the oven. For the sauce, mix an even amount of vegetable stock and cream together with some musterd and some ginger syrup. Let boil and thicken a little.
When the pork is done, take it out of the oven and let it rest for at least 10 minutes. After that cut it into thick slices.
Put a canelle of the carrot stoemp on a plate. Arrange some slices of pork tenderloin on it. Drizzle some sauce over the meat. Add a few fondant potatoes and a few baked carrots. Enjoy!
